About the Role
We are seeking a General Manager whose career has been forged in high-calibre food and beverage operations. This role represents the natural career progression for accomplished F&B Directors and Restaurant Managers who are ready to broaden their operational scope while continuing to apply their deep understanding of what it takes to deliver both residential and non residential dining experiences at the highest level.
Because this is fundamentally a culinary-led operation, we specifically require someone whose formative experience has been in premium F&B environments. You will understand the service choreography, attention to detail, and operational precision that Michelin inspectors evaluate. You will know what excellence looks like because you have delivered it.
As the leader you will ensure that every touchpoint of the guest journey—from arrival through rooms, spa, and dining—meets the exacting standards required for Michelin recognition. You will have full operational accountability for the non-culinary divisions (Rooms, Wellness, Guest Services) while ensuring these seamlessly support the culinary ambitions.

Key Responsibilities
Culinary Partnership & Michelin Standards
• Serve as the leader to the operational team and the Executive Chef, ensuring all hotel systems, logistics, and service protocols maximise the potential for Michelin recognition
• Ensure front-of-house teams across all departments are trained to deliver Michelin-level service standards
• Define and uphold the company's service philosophy, ensuring consistency across the entire guest journey
• Maintain property standards, aesthetics, and functionality to the highest luxury benchmarks
Operational Leadership
• Full operational accountability for Food and Beverage, Rooms Division and Wellness facilities (spa, gym, pools)
• Lead the coordination of bespoke guest experiences and curated packages combining accommodation, dining, and wellness
• Oversee implementation of operational systems including PMS, POS (Lightspeed), and guest CRM platforms (SevenRooms)
• Build, lead, and develop high-performing teams across all non-culinary departments
Commercial & Compliance
• Full P&L ownership and budget accountability for the entire operation
• Drive revenue maximisation through pricing strategies, partnerships, and sales initiatives
• Implement and enforce standard operating procedures across all departments
• Ensure 100% compliance with Guernsey regulations, licensing requirements, and health and safety standards
Guest Experience
• Champion a culture of exceptional, personalised service befitting an ultra-luxury operation
• Handle VIP and high-net-worth guest relationships with discretion and professionalism
• Continuously evaluate and enhance the guest journey to support reputation objectives
Candidate Profile
Essential Experience
• Proven track record as F&B Director or General Manager within premium dining establishments or luxury F&B or Hotel operations is essential.
• Minimum 3 years' progressive experience in high-calibre food and beverage operations
• Demonstrable experience operating at or supporting Michelin-starred, AA Rosette, or equivalent standard venues
• Experience with high-value outlets and the operational precision this demands
• Full P&L accountability and commercial acumen with proven delivery against financial targets
• Track record of building and leading high-performing service teams
Desirable Experience
• Experience in boutique or luxury hotel operations (rooms, wellness, or multi-department)
• Opening experience—launching new restaurants or hotel properties from pre-opening through stabilisation
• Experience working directly with Michelin-starred or Michelin-aspiring culinary teams
• Familiarity with hospitality technology platforms (PMS, POS, CRM, reservation systems)
