As a Sous Chef, your responsibilities include assisting the Head Chef with daily kitchen operations, maintaining standards, managing budgeted GP, developing new dishes, and overseeing procurement. A strong background in the field and natural leadership skills are essential. You will play a key role in training and developing the team and should have financial and administrative knowledge.
Candidates should have at least 2 years of experience as a Sous Chef or Senior CDP, ready for the next step, demonstrating strong leadership and the ability to motivate a team under pressure.
Job Requirements:

Assist, and in the Head Chef's absence, take full control of the kitchen team. This includes training, recruitment, staff development, and managing daily kitchen duties.

Ensure GP targets are met and food costs are controlled.

Manage health and safety procedures in accordance with company policy, maintaining records.

Oversee kitchen team expenditures and costs.

Develop new menus and dishes, including costings and allergen sheets.

Ensure implementation of cleaning rota’s and maintain a safe, clean kitchen.

Partially manage controllable kitchen finances, including disposables, food purchasing, and wastage.

Assist the Head Chef with food purchasing, supplier relations, kitchen rotas, and maintaining S.O.P.s.

Uphold high standards in food quality and execution.

Maintain punctuality and professionalism at all times.

Report any necessary maintenance.
WHAT YOU NEED TO QUALIFY:
- Minimum 2 years work experience as Sous Chef or 3-4 years as Senior / Chef de Partie in a hotel preferably with experience in luxury international brands.
- Comprehensive knowledge of kitchen hygiene practices and occupational health and safety standards will be essential.
- City and Guild Culinary Arts Level 2 or higher or similar qualification is required
- Police Clearance Certificate (Issued within the past 6 months)
- TWO service records (MUST BE WITHIN THE PAST 6 YEARS)
- English Language Test (IELTS)
- Food Hygiene Level 2 / 3
- Food Allergen Safety Level 1
